Comforting and simple slow cooker dish featuring tender chicken and flavorful rice with lemon and herbs.

  • 4 chicken breasts
  • 1 cup rice
  • 2 cups chicken broth
  • 1 lemon (juiced and zested)
  • 2 cloves garlic (minced)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Place the rice in the bottom of the slow cooker.
  2. Pour the chicken broth over the rice, ensuring it’s well distributed.
  3. Season each chicken breast with salt, pepper, thyme, and rosemary. Lay them on top of the rice.
  4. In a separate bowl, mix the lemon juice and zest with the minced garlic.
  5. Pour this mixture over the chicken, ensuring an even coat.
  6. Cover the slow cooker and set it to cook on low for 4-6 hours until the chicken is fully cooked and tender, and the rice is fluffy.
  7. Once done, fluff the rice with a fork and serve chicken on top, garnished with fresh parsley.

Notes

For a healthier twist, swap rice for quinoa or use vegetable broth for a vegetarian option. Marinate chicken the night before for more flavor.
