Slow Cooker Marry Me Chicken

A rich and creamy chicken dish cooked slowly to tenderness, perfect for any gathering.

Ingredients

  • 650 g Skinless, boneless chicken breast (cut into bite-sized pieces)
  • 30 g Plain flour
  • Sea salt and freshly ground black pepper, to taste
  • 3 Garlic cloves (peeled and crushed)
  • 100 g Sun dried tomatoes (drained and very finely chopped)
  • 1 tsp Dried oregano
  • 2 tsp Paprika
  • 300 ml Boiling water
  • 1 Chicken stock cube (undiluted, crumbled)
  • 100 g Cream cheese
  • 50 g Parmesan (grated)
  • 15 g Fresh basil leaves

Instructions

  1. Toss the chicken pieces in plain flour, seasoning with salt and pepper.
  2. Place the floured chicken in the slow cooker and add garlic, sun-dried tomatoes, oregano, paprika, and crumbled chicken stock.
  3. Pour boiling water over the mixture.
  4. Set your slow cooker to HIGH for 2.5 to 3 hours or LOW for 5 to 6 hours.
  5. Stir in cream cheese, Parmesan, and basil just before serving.

Notes

Feel free to swap chicken breast for thigh or use gluten-free flour for a lighter option.
