Delightful pancakes inspired by the flavors of traditional Spanish churros, topped with cinnamon sugar.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup cinnamon sugar (for topping)

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, mix the milk, egg, melted butter, and vanilla extract until well combined.
  3. Pour the wet ingredients into the dry mixture. Stir gently until just combined—be careful not to overmix!
  4. Heat a non-stick skillet over medium heat and lightly grease it.
  5. For each pancake, pour 1/4 cup of batter onto the skillet.
  6. Cook until bubbles form on the surface, then flip and continue cooking until they are golden brown.
  7. Remove the pancakes from the skillet and immediately sprinkle with cinnamon sugar.
  8. Repeat the process with any remaining batter and serve warm while still fresh.

Notes

Best enjoyed warm, drizzled with maple syrup or topped with fresh fruit. Leftovers can be stored in an airtight container for up to three days.
