Spicy Mexican Stuffed Bell Peppers

Delightful stuffed bell peppers filled with a savory mixture of ground meat, beans, and spices.

Ingredients

  • 4 large bell peppers
  • 1 pound ground beef or turkey
  • 1 cup cooked rice
  • 1 can black beans, rinsed and drained
  • 1 cup corn
  • 1 cup salsa
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet over medium heat, cook the ground beef or turkey until browned. Drain any excess fat.
  4. Add the cooked rice, black beans, corn, salsa, chili powder, cumin, salt, and pepper to the skillet. Mix until combined and heated through.
  5. Stuff the mixture into each bell pepper until they are full. Arrange the stuffed peppers upright in a baking dish.
  6. If you like, sprinkle cheese on top of each pepper.
  7. Pour a little water into the bottom of the baking dish to help steam the peppers while cooking.
  8. Cover the dish with foil and bake for 30 minutes.
  9. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender.
  10. Garnish with fresh cilantro before serving.

Notes

For a vegetarian option, substitute ground meat with quinoa or lentils. Customizing spices can enhance the flavor.
