A quick and comforting Spinach & Cheese Omelette packed with wholesome ingredients and rich flavors, perfect for any meal.

Ingredients

  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • 1/2 onion, diced
  • 2 cups fresh spinach
  • 3 cage-free organic eggs
  • 1 slice havarti cheese
  • 1 tomato, sliced
  • Pinch sea salt
  • Pinch black pepper

Instructions

  1. Finely mince the garlic and dice the onion. Set the fresh spinach aside.
  2. Crack the eggs into a bowl, adding a pinch of sea salt and black pepper. Whisk until well combined.
  3. Heat a nonstick fry pan over medium heat. Add olive oil.
  4. After about 2 minutes, toss in the diced onions and minced garlic, stirring well.
  5. Once the onions are translucent (about 3 minutes), add the spinach. Cook until it’s wilted, about 2 minutes.
  6. Pour in the whisked eggs. Use a spatula to run around the edges after 1 minute to prevent sticking.
  7. When the egg begins to set, place the cheese over one half of the omelette and fold it over. Cook for another minute, gently flipping and cooking for an extra 30 seconds.
  8. Serve immediately, garnished with sliced tomatoes on the side.

Notes

Serve with fresh avocado salad or whole-grain toast for extra flavor. Can add fresh herbs for enhanced taste.
