  • 1 cup Cottage Cheese
  • 2 tablespoons Olive Oil
  • 1 large Egg
  • 1 cup All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 2 cups Baby Spinach, finely chopped
  • 1 cup Shredded Mozzarella Cheese

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine cottage cheese, olive oil, and egg. Mix until smooth and creamy.
  3. In another bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture, folding until just combined.
  5. Fold in the finely chopped spinach and shredded mozzarella cheese.
  6. Scoop portions of the mixture and shape them into bagels, placing each on the prepared baking sheet.
  7. Bake for 20–25 minutes, until golden brown and firm to the touch.
  8. Let them cool slightly before serving.

Notes

For variations, consider adding sun-dried tomatoes, olives, or different cheeses. Store in an airtight container for up to 3 days in the fridge or freeze for longer storage.
