Delicious rolls filled with a savory mixture of eggs, diced ham, and wilted spinach, perfect for breakfast or brunch.

Ingredients

  • 1 cup warm milk (about 105-115°F)
  • 2 ¼ teaspoons active dry yeast (1 packet)
  • 2 tablespoons granulated sugar
  • ½ teaspoon salt
  • ¼ cup unsalted butter, melted
  • 3 ½4 cups all-purpose flour, plus more for dusting
  • 6 large eggs
  • ¼ cup milk or cream
  • Salt and pepper to taste
  • 4 ounces cooked ham, diced
  • 5 ounces fresh spinach, roughly chopped
  • 2 tablespoons butter or olive oil
  • ½ cup shredded cheese (optional)
  • 1 egg, beaten (for egg wash, optional)
  • 1 tablespoon milk or water (for egg wash, optional)

Instructions

  1. Warm the milk in a large bowl, stir in yeast and sugar, and let sit for 5-10 minutes until foamy.
  2. Add melted butter and salt to the mixture; stir until combined.
  3. Gradually add flour, knead until smooth and elastic (5-7 minutes).
  4. Transfer to oiled bowl, cover, and let rise in a warm place until doubled in size (1-1.5 hours).
  5. Prepare filling by whisking together eggs, milk or cream, salt, and pepper.
  6. Sauté spinach in butter or olive oil for 2-3 minutes until wilted.
  7. Scramble the eggs with the spinach, stir in cheese if using.
  8. Punch down risen dough, turn out onto floured surface, and divide into 12 pieces.
  9. Fill each piece with filling, fold edges over, and seal.
  10. Place rolls seam-side down on a baking sheet; optionally brush with egg wash.
  11. Let rise for another 30 minutes, then bake at 375°F (190°C) for 18-20 minutes until golden brown.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to 2 months.
