A delightful lemon loaf that captures the moist texture and zesty flavor of Starbucks’ famous treat, perfect for any occasion.

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3 large eggs
  • 1 cup granulated sugar
  • 1/2 cup sour cream or Greek yogurt
  • 1/2 cup vegetable oil
  • 2 tbsp unsalted butter, melted
  • 2 tbsp lemon zest (from about 2 lemons)
  • 1/4 cup fresh lemon juice
  • 1 tsp vanilla extract
  • 1/2 tsp lemon extract
  • 1 cup powdered sugar
  • 23 tbsp fresh lemon juice (for glaze)
  • 1/2 tsp lemon zest (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper for easy removal.
  2. Whisk together the flour, baking powder, baking soda, and salt in a medium bowl. Set it aside for now.
  3. Whisk the eggs, granulated sugar, sour cream (or yogurt), vegetable oil, and melted butter in a large mixing bowl until the mixture is smooth and well combined.
  4. Stir in the lemon zest, lemon juice, vanilla extract, and lemon extract until everything is fully integrated.
  5. Gradually add the dry ingredient mixture to the wet ingredients. Gently stir until just combined, being careful not to overmix.
  6. Pour the batter into your prepared loaf pan, smoothing the top. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the loaf cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  8. Whisk together the powdered sugar and 2-3 tablespoons of fresh lemon juice in a small bowl until smooth.
  9. Drizzle the lemon glaze over the top of the cooled loaf. Garnish with additional lemon zest if desired. Slice and enjoy!
