A delightful balance of sweet and spicy flavors that turns simple chicken thighs into a culinary masterpiece, perfect for busy weeknights or family gatherings.

Ingredients

Scale
  • 6 chicken thighs (boneless, keep the skin on)
  • 2 cloves of garlic (grated)
  • 3 stalks of green onions (white and green parts separated)
  • 2 tbsp gochujang paste
  • 2 tbsp honey
  • 3 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil

Instructions

  1. Debone the Chicken: Ensure there are no bones in the boneless chicken thighs for a tender finish.
  2. Prepare the Marinade: In a bowl, combine the grated garlic, gochujang paste, honey, rice vinegar, soy sauce, and sesame oil.
  3. Mix the Marinade: Stir until the mixture is well combined and smooth.
  4. Marinate the Chicken: Place the chicken thighs in the marinade, making sure they are completely coated. Let them marinate for at least 30 minutes — longer if you can!
  5. Cooking Options: Choose your preferred cooking method: grill, bake, or pan-sear the chicken until it reaches an internal temperature of 165°F for safety.

Notes

For optimal flavor, marinate the chicken for at least one hour, or even overnight. Adjust the gochujang based on spice preference.
