A tasty and nutritious breakfast that’s ready to go when you wake up, featuring creamy Greek yogurt, cream cheese, and fresh strawberries.

  • 3 oz cream cheese, softened
  • 1 cup almond milk
  • 2 tbsp pure maple syrup
  • 1 tsp vanilla extract
  • 1 cup old-fashioned oats
  • 1 tbsp chia seeds
  • 1/2 cup strawberries, diced
  • Pinch of salt
  • 1/2 cup strawberries, chopped
  • 1 tbsp pure maple syrup (for reduction)

Instructions

  1. Combine the softened cream cheese, Greek yogurt, almond milk, pure maple syrup, and vanilla extract in a mixing bowl. Mix until smooth.
  2. Add the dry ingredients: oats, chia seeds, and a pinch of salt. Stir until completely combined.
  3. Fold in the diced strawberries, ensuring they are evenly distributed.
  4. Transfer the mixture to an airtight container and refrigerate overnight.
  5. Place the chopped strawberries and maple syrup in a small saucepan over medium heat to make the strawberry reduction.
  6. Mash the softened strawberries and let the mixture simmer for a few minutes until thickened.
  7. Remove from heat and mix this reduction directly into the overnight oats or store separately until serving.
  8. Spoon the overnight oats into a bowl and top with the strawberry reduction. Enjoy!
