Stuffed Pork Chops

A simple yet gourmet-style stuffed pork chop recipe that is family-friendly and perfect for weeknight dinners.

  • 4 bone-in pork chops
  • 1 cup bread crumbs
  • 1/2 cup onion, chopped
  • 1/2 cup celery, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 cup chicken broth
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat 1–2 tablespoons olive oil in a skillet over medium heat. Add the chopped onion and celery and cook until softened, about 4–5 minutes. Add minced garlic for the last 30–60 seconds and sauté until fragrant. Remove from heat.
  3. In a mixing bowl, combine the sautéed vegetables with bread crumbs, thyme, rosemary, chicken broth, and salt and pepper to taste. Stir until the mixture holds together but is not soggy.
  4. Cut a pocket into the side of each pork chop, being careful not to cut through. Spoon the stuffing into each pocket and press gently to compact.
  5. Add another tablespoon of olive oil to the skillet and heat over medium-high. Brown each stuffed chop 2–3 minutes per side until golden.
  6. Transfer the browned chops to a baking dish and bake in the preheated oven for 25–30 minutes, or until the pork is cooked through (145°F / 63°C).
  7. Let the chops rest for 5 minutes before serving. Plate and serve hot with your choice of sides.

Notes

For an alternate stuffing texture, consider adding cheese or fruits. Can be made ahead and reheated.
