Delicious and nutritious cookies packed with oats, chia seeds, and nut butter, perfect for breakfast or a snack.

Ingredients

  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/2 cup nut butter (like almond or peanut)
  • 1/4 cup dark chocolate chips
  • 1/4 cup chia seeds
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the rolled oats, almond flour, chia seeds, and salt in a mixing bowl.
  3. Blend the nut butter, honey (or maple syrup), and vanilla extract together until smooth in another bowl.
  4. Pour the wet mixture into the dry mixture, stirring until combined.
  5. Fold in the dark chocolate chips.
  6. Form small balls of dough using a spoon or cookie scoop and place them on a lined baking sheet.
  7. Flatten each ball slightly with the back of a spoon.
  8. Bake for 10-12 minutes, or until golden brown.
  9. Let them cool on the sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze in a single layer and transfer to a zip-top bag for up to three months.
