  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple chunks (canned or fresh)
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup ketchup
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Cooked rice for serving
  • Chopped green onions for garnish (optional)

Instructions

  1. In a bowl, mix the soy sauce, brown sugar, ketchup, minced garlic, grated ginger, and red pepper flakes (if using).
  2. Place the chicken breasts in the crock pot and pour the prepared sauce over them.
  3. Top the chicken with pineapple chunks.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through.
  5. Once cooked, shred the chicken using two forks right in the sauce, mixing well.
  6. Serve over cooked rice and garnish with chopped green onions if desired.

Notes

To enhance the dish, consider browning the chicken in a skillet before placing it in the crock pot for added flavor. Adjust the amount of red pepper flakes for spiciness.
