  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup ketchup
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground ginger
  • 1 teaspoon cornstarch (optional, for thickening)
  • 1 tablespoon water (optional, for thickening)
  • Sliced green onions (for garnish)
  • Pineapple chunks (for garnish)

Instructions

  1. Place the chicken breasts directly into your slow cooker.
  2. In a bowl, whisk together the pineapple juice, soy sauce, brown sugar, ketchup, minced garlic, and ground ginger until well combined.
  3. Pour this savory mixture over the chicken breasts in the slow cooker.
  4. Cover and let it cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and cooked through.
  5. If you like a thicker sauce, mix the cornstarch and water in a small bowl to create a slurry. Stir this into the crock pot during the last 30 minutes of cooking.
  6. Once cooked, shred the chicken if desired and serve it over rice, garnished with sliced green onions and fresh pineapple chunks.

Notes

For a lighter meal, serve over quinoa or cauliflower rice, or try lettuce wraps. This dish is also great for meal prep, lasting 3-4 days in the refrigerator.
