Delightful and nutritious sweet potato breakfast bowls topped with creamy yogurt, honey, and banana.

Ingredients

  • 2 large sweet potatoes
  • 1 cup Greek yogurt
  • 1/4 cup almond milk
  • 1 banana
  • 1 tablespoon honey
  • 1/2 teaspoon cinnamon
  • Chopped nuts or seeds for topping

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes thoroughly and pierce them with a fork several times.
  3. Bake the sweet potatoes for 45-60 minutes, or until they are tender.
  4. Once done, let them cool slightly, then slice them open.
  5. Mash the sweet potato flesh with Greek yogurt, almond milk, honey, and cinnamon until smooth.
  6. Serve in bowls and top with banana slices and chopped nuts or seeds.

Notes

Feel free to substitute almond milk or honey for preferred varieties. Customize toppings as desired.
