  • 2 sweet potatoes, diced
  • 1 can black beans, drained and rinsed
  • 4 eggs
  • 1 bell pepper, diced
  • 1 jalapeño, diced
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the diced sweet potatoes and cook for about 10 minutes, stirring occasionally, until they begin to soften.
  3. Stir in the diced bell pepper and jalapeño, along with the chili powder, salt, and pepper. Cook for another 5 minutes until all the vegetables are tender.
  4. Mix in the black beans and continue cooking until they are heated through.
  5. Create small wells in the vegetable mixture and crack an egg into each well. Cover the skillet and cook until the eggs reach your desired doneness, about 5-7 minutes.
  6. Serve warm, garnished with fresh cilantro if desired.
