  • 4 cups mashed sweet potatoes
  • 1 cup sugar
  • 1/2 cup milk
  • 1/2 cup butter, melted
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup pecans, chopped
  • 1 cup mini marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. In a large bowl, blend the mashed sweet potatoes, sugar, milk, melted butter, beaten eggs, vanilla extract, and salt until smooth.
  3. Pour the sweet potato mixture into the prepared baking dish, spreading it out evenly.
  4. Bake the casserole in the preheated oven for 25 minutes.
  5. Remove the casserole and sprinkle chopped pecans and mini marshmallows on top.
  6. Return the dish to the oven for an additional 10-15 minutes, until the marshmallows are golden brown.
  7. Allow the casserole to cool for about 5 minutes before serving warm.

Notes

For a dairy-free option, substitute almond milk for regular milk, and coconut oil for butter. Taste and adjust the sweetness to your preference.
