  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup melted butter
  • 2 eggs

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a baking pan.
  2. In a mixing bowl, blend the sweet potato puree, milk, melted butter, and eggs until fully combined.
  3. In a separate bowl, mix together the cornmeal, flour, sugar, baking powder, and salt.
  4. Gradually add the dry mixture to the wet ingredients, stirring until smooth.
  5. Pour the batter into the greased baking pan, spreading it evenly.
