A vibrant and wholesome dish combining the earthiness of sweet potatoes with the bright zing of oranges, perfect for breakfast, brunch, or dinner.

  • 2 large sweet potatoes, peeled and diced
  • 1 red bell pepper, diced
  • 1 small red onion, diced
  • 2 medium oranges, peeled, segmented, and cut into chunks
  • 2 cups baby spinach leaves
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large eggs
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons fresh cilantro or parsley, chopped

Instructions

  1. Preheat your oven to 425°F and line a large sheet pan with parchment paper.
  2. Toss the diced sweet potatoes, red bell pepper, and red onion with olive oil, smoked paprika, cumin, garlic powder, salt, and pepper until well-coated.
  3. Spread the seasoned vegetables in a single layer on the prepared sheet pan. Roast for 20 minutes, stirring halfway through.
  4. Remove the pan from the oven and stir in the orange segments and baby spinach, mixing gently.
  5. Create 4 small wells in the vegetables and crack one egg into each well, if desired.
  6. Return the pan to the oven and roast for an additional 8 to 10 minutes, or until the sweet potatoes are tender and the eggs are cooked to your liking.
  7. Sprinkle crumbled feta cheese and chopped fresh herbs over the hash. Serve warm.

Notes

Feel free to use other vegetables like zucchini or swap out the feta for another cheese for a dairy-free option. For storage, keep in an airtight container in the refrigerator for up to 3 days.
