Delightful breakfast tacos featuring crispy bacon, creamy scrambled eggs, and seasoned potatoes in tender corn tortillas.

Ingredients

  • 4 slices bacon
  • 2 tbsp canola oil
  • 4 cups potatoes, cut into 1-inch cubes
  • 2 1/2 tbsp taco seasoning mix
  • 8 soft corn tortillas (6 inch)
  • 8 eggs, well beaten
  • 1/2 cup shredded Monterey Jack cheese (2 oz)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Arrange the bacon on a baking sheet and bake for about 10 minutes, or until crispy. Once done, chop it into small pieces and set aside.
  3. Heat the canola oil in a skillet over medium heat.
  4. Add the cubed potatoes and sprinkle with taco seasoning. Cook for 15–20 minutes, stirring every five minutes, until soft.
  5. Position the corn tortillas upright in a 13×9-inch baking dish.
  6. Scramble the well-beaten eggs in another skillet over medium heat until slightly soft; remove from heat.
  7. Stuff each tortilla with about 1/4 cup of the seasoned potatoes, then add scrambled eggs, chopped bacon, and 1 tablespoon of cheese.
  8. Bake the assembled tacos in the oven for an additional 10 minutes or until heated through and the cheese has melted beautifully.
  9. Serve immediately and enjoy the smiles around your breakfast table!

Notes

For extra crispiness, bake bacon on a wire rack. Use pre-cooked or frozen diced potatoes to save time.
