A vibrant and hearty Tex Mex dish featuring seasoned turkey, crispy potatoes, and fluffy scrambled eggs, perfect for any meal occasion.

  • 1 28oz bag Ore-Ida Potatoes O’Brien
  • 3 tablespoons olive oil
  • 1 pound ground turkey (93% lean)
  • 1 1/2 teaspoon dried oregano
  • 1/21 teaspoon chipotle chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon table salt
  • 8 large eggs
  • 1 cup cheddar cheese
  • Salsa or hot sauce (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Spread the frozen Potatoes O’Brien evenly on a large sheet pan. Drizzle with olive oil.
  3. Bake for 35 minutes until golden, tossing halfway through to ensure even cooking.
  4. Once the potatoes are out of the oven, season them with salt and divide into meal prep containers.
  5. In a skillet, heat olive oil over medium. Add the ground turkey, breaking it apart as it cooks.
  6. Cook the turkey until browned and the liquid evaporates, then stir in oregano, chipotle chili powder, garlic powder, and salt.
  7. Transfer the seasoned turkey into meal prep containers.
  8. In a bowl, whisk the eggs and season with salt and pepper to taste.
  9. In the same skillet, cook the eggs until just set, making sure not to overcook them.
  10. Divide the scrambled eggs among the containers and generously sprinkle with cheddar cheese.
  11. Allow everything to cool slightly, then store in the refrigerator. Enjoy within four days.

Notes

To achieve perfect scrambled eggs, cook them over low heat for fluffy texture. Customize with cheese or add veggies for more variety.
