A deliciously rich and creamy chicken skillet dish that combines hearty chicken with a flavorful sauce, perfect for family dinners or entertaining guests.

  • 4 boneless skinless chicken breasts (or thighs)
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter (divided)
  • 1 medium onion (finely chopped)
  • 3 cloves garlic (minced)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley (chopped, plus extra for garnish)
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt (adjust to taste)
  • A pinch of cayenne pepper (optional)

Instructions

  1. Prepare the Chicken: Start by patting the chicken dry with paper towels. Season both sides generously with salt, black pepper, smoked paprika, garlic powder, and onion powder.
  2. Sear the Chicken: Heat 2 tablespoons of olive oil and 1 tablespoon of butter in a skillet over medium-high heat. Add the chicken and cook for 4-5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
  3. Sauté the Aromatics: Lower the heat to medium. In the same skillet, add the remaining butter and onion. Cook for 3-4 minutes until the onion softens, then stir in the minced garlic and cook for another 30 seconds until fragrant.
  4. Create the Sauce: Pour in the chicken broth, scraping up any brown bits stuck to the pan. Add the heavy cream and Parmesan cheese, stirring continuously until the sauce is smooth and thickened. Taste and adjust the seasoning as needed.
  5. Simmer the Chicken: Return the chicken to the skillet, spooning the sauce over it. Let it simmer on low heat for 8-10 minutes until the chicken is cooked through.
  6. Garnish and Serve: Finish by sprinkling fresh parsley on top. Serve hot, accompanied by rolls, mashed potatoes, or steamed vegetables.
