  • 4 pieces boneless skinless chicken breasts or thighs
  • 4 tablespoons butter (or olive oil)
  • 4 cloves garlic (minced)
  • 1 cup chicken broth (low-sodium recommended)
  • 2 tablespoons honey
  • 1 teaspoon paprika
  • Salt and cracked black pepper, to taste
  • 1 cup caramelized onions
  • 1 cup shredded cheddar or Monterey Jack cheese (optional)
  • 2 tablespoons dried parsley
  • 1 teaspoon cayenne pepper or hot sauce
  • 1/2 cup heavy cream
  • 1 cup cherry tomatoes and kalamata olives

Instructions

  1. Season the chicken with salt and cracked black pepper. Heat the butter in a large skillet over medium heat, then cook the chicken for about 6-7 minutes on each side until it’s cooked through. Once done, remove it from the skillet and set aside.
  2. In the same skillet, sauté the minced garlic and caramelized onions for about 2-3 minutes until fragrant.
  3. Add the chicken broth, honey, heavy cream, and paprika to the pan, and simmer for approximately 5 minutes.
  4. Return the chicken to the skillet along with the cherry tomatoes, olives, and cayenne pepper. Gently stir the mixture and simmer for another 2-3 minutes.
  5. If using cheese, sprinkle it on top and allow it to melt slightly. Garnish with parsley and serve hot.

Notes

Serve with rice, vegetables, or crusty bread. Store leftovers in the refrigerator for up to three days.
