Ingredients

  • 34 boneless, skinless chicken breasts
  • 1 cup shredded Jack cheese
  • 2 tablespoons olive oil
  • 23 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • ½ cup sour cream
  • Salt and pepper to taste
  • Chopped green onions for topping
  • Paprika for topping

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rub olive oil over the chicken breasts and season them generously with salt and pepper.
  3. In a medium skillet over medium-high heat, sear the chicken until it’s golden brown on both sides—about 5 minutes per side.
  4. Add the minced garlic to the skillet and cook for 30 seconds until fragrant.
  5. Carefully pour in the chicken broth, letting it simmer and scraping the bottom of the pan.
  6. Stir in the sour cream until well combined, allowing the mixture to bubble for about 5 minutes.
  7. Top each chicken breast with shredded Jack cheese.
  8. Transfer the skillet to the oven and bake for around 15 minutes or until the cheese is melty and bubbly.
  9. Garnish with chopped green onions and a sprinkle of paprika before serving.

Notes

Allow leftovers to cool before storing. They will keep in the refrigerator for 3-4 days or can be frozen for 2-3 months.
