A delicious and comforting dish featuring juicy chicken breasts smothered with sautéed onions, mushrooms, and melted mozzarella cheese.

  • 4 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 medium yellow onion, sliced
  • 8 ounces mushrooms, sliced
  • 1/3 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Begin by patting the chicken breasts dry and season both sides with salt, black pepper, garlic powder, and smoked paprika.
  2. In a large skillet over medium-high heat, add the olive oil and butter, allowing them to heat up.
  3. Sear the chicken breasts in the skillet for about 4-5 minutes on each side until they’re golden brown. Once done, remove the chicken from the skillet and set it aside.
  4. In the same skillet, toss in the sliced onions and mushrooms. Sauté them for 8-10 minutes until they’ve softened and become fragrant.
  5. Pour in the chicken broth, using a wooden spoon to scrape any delightful browned bits from the bottom of the pan.
  6. Return the seared chicken breasts to the skillet, spooning the sautéed onions and mushrooms over each piece.
  7. Evenly sprinkle the mozzarella cheese over the chicken.
  8. Cover the skillet, reduce the heat to low, and cook for an additional 5-7 minutes until the cheese melts and the chicken reaches an internal temperature of 165°F.
  9. Garnish with chopped parsley before serving hot.

Notes

This dish pairs well with creamy mashed potatoes or a fresh salad. Store leftovers in an airtight container for 3-4 days.
