4 boneless, skinless chicken breasts (6–8 oz each)
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
2 tablespoons butter
8 oz mushrooms (sliced)
1/4 cup all-purpose flour
1 cup beef broth
1 cup whole milk
1 cup shredded Monterey Jack cheese
2 slices cooked bacon (crumbled, optional)
2 green onions (sliced, optional)
Instructions
Pat the chicken breasts dry. Season both sides generously with salt, black pepper, garlic powder, and onion powder.
Heat olive oil in a skillet over medium-high heat. Sear the chicken for 6-7 minutes on each side until cooked through. Transfer the chicken to a plate and keep warm.
In the same skillet, melt the butter and sauté the sliced mushrooms until golden brown and fragrant.
Sprinkle flour over the mushrooms and stir to coat. Gradually whisk in the beef broth and milk until combined. Let the mixture simmer until thickened.
Return the chicken to the skillet, generously top with the mushroom gravy, and sprinkle with shredded cheese.
Turn on the broiler and broil for 1-2 minutes until the cheese is bubbly and starting to brown.
