A comforting dish that uses flour tortillas as a base for baked eggs, spinach, and tomatoes, perfect for any meal.

Ingredients

Scale
  • 4 flour tortillas
  • 6 eggs
  • 2 cups fresh spinach, chopped
  • 1 cup tomatoes, diced
  • 1/2 cup cottage cheese (optional)
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease a baking dish with olive oil to prevent sticking.
  3. Lay the flour tortillas in the dish, overlapping slightly if necessary to create a sturdy base.
  4. In a mixing bowl, whisk together the eggs with a pinch of salt and pepper until well combined.
  5. Fold in the chopped spinach and diced tomatoes to the egg mixture, gently combining it all.
  6. Pour the egg mixture evenly over the tortillas, making sure to distribute the vegetables well.
  7. If using cottage cheese, dollop it generously on top of the mixture for added creaminess.
  8. Place the dish in the preheated oven and bake for 20-25 minutes, or until the eggs are fully set.
  9. Let the dish cool for a couple of minutes before slicing and serving.

Notes

This dish is versatile; feel free to substitute ingredients like spinach for kale or use corn tortillas for a gluten-free option.
