4 boneless, skinless chicken breasts
1/2 cup all-purpose flour
Salt and pepper, to taste
1/4 cup olive oil
1/4 cup unsalted butter
1/2 cup chicken broth
Juice of 2 lemons
1/4 cup capers, rinsed
Fresh parsley, chopped (for garnish)
Instructions
Season the chicken breasts generously with salt and pepper. Dredge each piece in flour, shaking off any excess.
In a large skillet, combine olive oil and unsalted butter. Heat over medium-high until the butter is fully melted.
Add the chicken to the skillet and cook each side until golden brown, about 3-4 minutes. Remove the chicken and set aside.
In the same skillet, pour in the chicken broth, add the lemon juice and rinsed capers. Bring to a simmer, scraping browned bits from the pan with a spatula.
Return the chicken to the skillet and cook in the sauce for an additional 5 minutes, allowing flavors to meld.
Sprinkle fresh chopped parsley on top before serving. Serve immediately and enjoy!
