A delicious take on the classic chicken parmesan with a crispy coating and gooey cheese, perfect for any family dinner or special occasion.

  • 4 boneless, skinless chicken breasts (about 6 oz each)
  • 1 cup all-purpose flour
  • 2 large eggs, lightly beaten
  • 1 cup Panko breadcrumbs
  • 1/2 cup Italian seasoned breadcrumbs
  • 1/2 cup grated Parmesan cheese, plus more for topping
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1/4 cup olive oil, for frying
  • 2 cups marinara sauce, warmed
  • 8 oz fresh mozzarella cheese, sliced
  • 2 tablespoons fresh basil, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish.
  2. Pound each chicken breast to a 1/2-inch thickness if thick. Season with salt and pepper.
  3. Set up three shallow dishes: flour in the first, whisked eggs in the second, and a mix of breadcrumbs, Parmesan, garlic powder, and oregano in the third.
  4. Dredge each chicken breast in flour, dip in egg, then coat in the breadcrumb mixture.
  5. Heat olive oil in a large skillet over medium-high heat. Fry two cutlets until golden brown, about 3 to 4 minutes per side.
  6. Transfer browned cutlets to the baking dish. Top each with marinara sauce, mozzarella, and Parmesan.
  7. Bake for 10 to 12 minutes, until cheese is bubbly and chicken’s internal temperature reaches 165°F (74°C).
  8. Garnish with fresh basil and serve immediately, with pasta or salad.

Notes

For extra crunch, consider double-dipping the chicken in flour, egg, and breadcrumbs. You can customize with different cheeses or added vegetables.
