A colorful and healthy skillet dish packed with fresh vegetables, perfect for busy weeknights.

Ingredients

  • 2 Zucchini, chopped
  • 2 Bell peppers, chopped
  • 1 cup Cherry tomatoes, halved
  • 2 cups Fresh spinach
  • 2 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • 1 tablespoon Italian seasoning
  • Pasta or quinoa for serving
  • Parmesan cheese (optional), for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Toss in chopped zucchini, bell peppers, and cherry tomatoes. Cook until the vegetables are tender.
  4. Add fresh spinach along with Italian seasoning, cooking for another 2-3 minutes until the spinach wilts.
  5. Serve over your choice of cooked pasta or quinoa, topping with parmesan cheese if desired.

Notes

Feel free to substitute ingredients to your taste, such as using broccoli instead of zucchini or adding red pepper flakes for heat.
