  • 1 cup cookie butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine cookie butter with granulated and brown sugars. Mix until smooth.
  3. Stir in the egg and vanilla extract until combined.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually add your dry mixture to the wet ingredients. Mix until just combined; don’t overmix!
  6. If you’re using chocolate chips, fold them in gently.
  7. Use a tablespoon to scoop dough onto a baking sheet lined with parchment paper, spacing them a couple of inches apart.
  8. Bake for 10-12 minutes, until the edges are lightly golden.
  9. Let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.

Notes

For chewiest cookies, avoid overmixing. Experiment with spices like cinnamon for added flavor.
