Delicious and moist banana oat muffins, perfect for breakfast or a snack.

Ingredients

  • 2 ripe bananas, mashed
  • 1 1/2 cups rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 cup milk (any kind)
  • 1 teaspoon vanilla extract
  • Optional: chocolate chips, nuts, or dried fruit

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mash the ripe bananas until smooth in a mixing bowl.
  3. Stir in the rolled oats, baking powder, baking soda, salt, and cinnamon until well combined.
  4. Pour in the milk and vanilla extract, mixing gently until just combined.
  5. Fold in any optional ingredients gently now.
  6. Fill your muffin cups with the mixture, about 3/4 full.
  7. Bake for 18-20 minutes, or until the tops are golden brown and a toothpick inserted comes out clean.
  8. Let the muffins cool for a few minutes in the pan before transferring to a wire rack. Enjoy your delicious muffins warm!
