Soft, nutritious, and packed with flavor, these Banana Cottage Cheese Muffins are perfect for a delightful breakfast or an afternoon snack.

  • 2 ripe bananas
  • 1 cup cottage cheese
  • 2 large eggs
  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 cup honey or maple syrup (optional)
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or grease the cups.
  2. Mash the 2 ripe bananas with a fork until mostly smooth.
  3. Add the cottage cheese, eggs, vanilla extract, and optional honey or maple syrup, then whisk until well combined.
  4. Whisk together the rolled oats, almond flour, baking powder, baking soda, ground cinnamon, and a pinch of salt in a separate bowl.
  5. Fold the dry mix into the wet mixture until just combined, being careful not to over-mix.
  6. Distribute the batter evenly among the muffin cups, filling each about 3/4 full.
  7. Bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

These muffins can be paired with almond butter or Greek yogurt for extra protein. They also freeze well for up to three months.
