A wholesome and flavorful breakfast dish combining cottage cheese and fresh blueberries, perfect for busy mornings and family brunches.

  • 2 cups cottage cheese
  • 1 cup fresh blueberries
  • 1/2 cup oats
  • 1/4 cup honey or maple syrup
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your baking dish.
  2. Combine the cottage cheese, oats, honey (or maple syrup), eggs, vanilla extract, baking powder, salt, and cinnamon in a large mixing bowl.
  3. Fold in the fresh blueberries, ensuring they are evenly distributed.
  4. Pour the mixture into the prepared baking dish and spread it out evenly.
  5. Bake for 30-35 minutes, or until the center is set and the top is lightly golden.
  6. Allow to cool for a few minutes before slicing and serve warm.

Notes
