A delightful breakfast bake combining blueberries and cottage cheese for a nutritious start to your day.

  • 1 cup cottage cheese
  • 2 eggs
  • 1/4 cup maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 cup oat flour
  • 1/4 teaspoon baking powder
  • 1/2 cup fresh or frozen blueberries
  • Pinch of salt
  • Butter or oil, for greasing

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a small baking dish with butter or oil.
  2. In a mixing bowl, whisk together the cottage cheese, eggs, maple syrup (or honey), vanilla extract, and cinnamon until smooth.
  3. Add the oat flour, baking powder, and a pinch of salt. Mix until well combined.
  4. Gently fold in the blueberries to avoid breaking them.
  5. Pour the mixture into the greased baking dish, spreading it out evenly.
  6. Bake in the preheated oven for 30–35 minutes, or until the center is set, and the top is golden brown.
  7. Allow the bake to cool slightly before serving warm or chilled.

Notes

Serve it warm with extra maple syrup or Greek yogurt. This dish can be stored in an airtight container in the fridge for up to 3–4 days.
