Delightful muffins that combine the comforting flavors of traditional French toast, perfect for breakfast or any time of day.

  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter (melted)
  • 1 cup milk
  • 2 large eggs
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp vanilla extract
  • 1/2 cup granulated sugar (for coating)
  • 1 tbsp ground cinnamon (for coating)

  • maple syrup (optional, for serving)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
  2. Whisk together the flour, sugar, baking powder, salt, and cinnamon until well combined.
  3. Combine the melted butter, milk, eggs, nutmeg, and vanilla extract in a large bowl, then whisk until smooth.
  4. Add the dry ingredients to the wet mixture gradually, stirring gently until just combined.
  5. Fill each muffin cup about two-thirds full with the batter.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack.
  8. Mix the granulated sugar and cinnamon together in a shallow dish.
  9. Dip the tops of the muffins in the cinnamon sugar mixture while they are still warm.
  10. Return the muffins to the oven for an additional 2-3 minutes to crisp the tops.

Notes

These muffins can be stored in an airtight container for up to three days or frozen for up to three months. Reheat in the microwave or toaster oven.
