Delicious and protein-packed Cottage Cheese Egg Bites, perfect for a quick breakfast or snack.

  • 6 large eggs
  • 1 cup cottage cheese
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1/2 cup diced vegetables (spinach, bell peppers, onions, etc.)
  • Salt and pepper to taste
  • Cooking spray or oil for greasing

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin with cooking spray or a light coat of oil.
  2. Whisk together the eggs, cottage cheese, salt, and pepper until combined smoothly.
  3. Stir in the shredded cheese and your choice of diced vegetables until evenly distributed.
  4. Pour the egg mixture into the muffin tin, filling each cup about two-thirds full.
  5. Bake for 20-25 minutes, or until the bites are set and golden on top.
  6. Allow to cool slightly before gently removing them from the muffin tin. Enjoy immediately, or save for meal prep!
