Delightful mini muffin-shaped pancake bites, perfect for breakfast or snacks, customizable with various toppings.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • Toppings (such as maple syrup, chocolate chips, or fruit)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
  2. Whisk together the flour, sugar, baking powder, baking soda, and salt in a bowl until well combined.
  3. Mix the buttermilk, egg, and melted butter in another bowl until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just mixed.
  5. Fill each muffin cup about two-thirds full with the batter.
  6. Add your desired toppings to each muffin cup; get creative here!
  7. Bake for 12-15 minutes or until the tops are golden brown and a toothpick inserted comes out clean.
  8. Allow them to cool slightly before carefully removing them from the tin.
  9. Serve warm with additional toppings, if you like.

Notes

Don’t overmix! A few lumps in your batter create a fluffier pancake popper. You can also experiment with different toppings before baking.
