Instructions

  1. Prepare your cottage cheese: In a food processor or blender, blend your cottage cheese until mostly smooth.
  2. Combine wet ingredients: In the same bowl or blender, add your eggs, granulated sugar, and vanilla extract. Whisk or blend until well combined.
  3. Whisk dry ingredients: In a larger bowl, mix together the all-purpose flour, baking powder, salt, and any spices you’re using.
  4. Combine wet and dry: Gently fold the wet mixture into the dry ingredients with a spatula. Add a little milk if the batter feels too thick.
  5. Heat your pan: Preheat a skillet over medium heat and lightly grease it with butter or oil.
  6. Cook the pancakes: Pour about ¼ cup of batter onto the skillet and cook for 2-3 minutes until bubbles appear on the surface.
  7. Flip and finish: Carefully flip the pancakes and cook for another 1-2 minutes until golden brown.
