These Easy, High-Protein Egg Bites are a delightful and nutritious treat, perfect for breakfast or as a snack, packed with eggs and various mix-ins.

  • 12 large eggs
  • 1 cup cottage cheese (full fat or low fat)
  • 1/2 cup milk (any kind)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup cooked, crumbled bacon or diced ham
  • 1/4 cup finely chopped spinach (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a standard 12-cup muffin tin or silicone molds.
  2. Grab a large bowl and whisk together the eggs, cottage cheese, milk, salt, and black pepper until the mixture is nice and smooth.
  3. Carefully fold in the shredded cheese, crumbled bacon or diced ham, and chopped spinach (if using).
  4. Pour the egg blend evenly into the muffin cups, filling each one about three-quarters full.
  5. Bake for 18 to 22 minutes, or until the egg bites are fully set in the centers and lightly golden on top.
  6. Let the bites cool in the muffin tin for about 5 minutes before gently removing them.
  7. Serve warm right away, or let them cool completely before storing for later.

Notes

Use silicone muffin molds for easy removal; whisk eggs thoroughly for light and fluffy bites.
