Ingredients
Scale
500 g Boneless Chicken Thighs
2 tbsp Olive Oil
1 tbsp Garlic Powder
1 tbsp Smoked Paprika Powder
1 tsp Chili Flakes
1 tsp Salt
1/2 tsp Black Pepper
2 Red Peppers
1 Onion
100 g Sun Dried Tomato
2 tbsp Tomato Paste
500 ml Heavy Cream
300 g Pasta of Choice
1 tbsp All-Purpose Flour
Fresh Parsley to Garnish
Instructions
Season the chicken thighs generously with garlic powder, smoked paprika, chili flakes, salt, and black pepper. Drizzle with olive oil, and let it marinate while you prepare the other ingredients, if you have time.
Heat a skillet over medium-high heat. Once hot, add the chicken and cook for about 7 minutes on each side, until fully cooked. Transfer the chicken to a separate bowl.
Toss in the diced red peppers and chopped onion. Sauté these for about 7 minutes, or until they become tender and aromatic.
Stir in the tomato paste and chopped sun-dried tomatoes, letting them mix and warm through.
Pour in the heavy cream and stir in the remaining spices. Then, add the cooked chicken back into the skillet, mixing everything well.
Create a slurry by combining 1 tablespoon of all-purpose flour with 1/4 cup of water. Gradually mix this into the sauce to thicken it.
Add your cooked pasta into the skillet, stirring to coat it evenly. Allow it to simmer for an additional 5 minutes until the sauce reaches your desired thickness.
Serve your perfected dish in a large bowl, garnished with fresh parsley for that extra pop!
Notes
For easy cleanup, use a non-stick skillet. Consider doubling the recipe for meal prep—this dish freezes well!
