These fluffy, protein-packed pancakes are a gluten-free alternative to traditional pancakes, perfect for breakfast or brunch.

Ingredients

  • 1 cup cottage cheese
  • 4 large eggs
  • 1/2 cup almond flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Butter or oil for cooking

Instructions

  1. Combine the cottage cheese, eggs, almond flour, baking powder, vanilla extract, and salt in a mixing bowl.
  2. Blend the mixture until smooth.
  3. Heat a non-stick skillet over medium heat and add a splash of butter or oil.
  4. Pour a ladle of the batter onto the skillet.
  5. Cook until bubbles form on the surface, about 2 to 3 minutes.
  6. Flip the pancake and cook until golden brown, roughly 1 to 2 minutes more.
  7. Repeat the process with the remaining batter, adding more oil or butter as necessary.
  8. Serve warm, topped with fresh fruit, yogurt, or maple syrup.

Notes

For extra fluffiness, separate the eggs and whip the egg whites before folding them into the batter.
