Light, fluffy pancakes made with cottage cheese and ripe bananas, perfect for breakfast or brunch.

  • 1 cup cottage cheese
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • Butter or oil for cooking

Instructions

  1. Mash the banana in a mixing bowl until smooth.
  2. Combine the cottage cheese and eggs; whisk until uniform.
  3. Mix the flour, baking powder, and salt in another bowl.
  4. Incorporate the dry mix into the banana mixture, stirring until just combined.
  5. Prepare a non-stick skillet over medium heat and coat with butter or oil.
  6. Pour about 1/4 cup of batter onto the skillet for each pancake.
  7. Cook until bubbles form, then flip to cook until golden on both sides.
  8. Serve warm with favorite toppings, like maple syrup or fresh fruits.
