Delightful and nutritious pancakes combining fluffiness with the hearty goodness of cottage cheese for a perfect breakfast treat.

Ingredients

  • 1 cup all-purpose flour (or whole wheat pastry flour)
  • 1 teaspoon baking powder
  • ¼ teaspoon cinnamon
  • 1 cup cottage cheese (full-fat, small curd recommended)
  • 2 large eggs
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • Oil

Instructions

  1. Whisk together the flour, baking powder, and cinnamon until well combined.
  2. Combine the cottage cheese, eggs, maple syrup, and vanilla extract in a blender or food processor. Blend until smooth, or whisk thoroughly if using a bowl.
  3. Pour the cottage cheese mixture into the bowl of dry ingredients. Stir until just combined; avoid overmixing. If the batter is too thick, add a splash of milk.
  4. Heat a non-stick skillet or griddle over low to medium heat and add a little oil.
  5. Pour about 1/4 cup of batter for each pancake. Cook until bubbles form on the surface, about 4-5 minutes.
  6. Flip the pancakes and cook for another 2-3 minutes, or until fully cooked.
  7. Serve immediately with your favorite toppings.

Notes

Store leftovers in an airtight container in the refrigerator for 2-3 days. Reheat in the microwave or on a skillet.
