Delicious and nutritious cookies made with sweet potato, perfect for breakfast or a healthy snack.

Ingredients

  • 1 cup sweet potato puree
  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/4 cup maple syrup
  • 1 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the sweet potato puree, maple syrup, and vanilla extract until smooth in a mixing bowl.
  3. Mix together the rolled oats, almond flour, cinnamon, salt, and baking powder in a separate bowl.
  4. Add the dry ingredients to the wet ingredients, mixing until well combined.
  5. Scoop tablespoon-sized amounts of dough onto a parchment-lined baking sheet.
  6. Flatten each cookie slightly with the back of a spoon.
  7. Bake for 12-15 minutes, or until set and lightly golden.
  8. Allow the cookies to cool before serving.
