  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp freshly ground pepper
  • 3 garlic cloves (minced)
  • 1 tsp oregano
  • 1 shallot (diced)
  • ½ tsp red pepper flakes
  • 1 cup chicken broth
  • 1 tbsp vegan butter
  • ½ cup coconut milk
  • ¾ cup sun-dried tomatoes (chopped)
  • 3 tbsp nutritional yeast
  • Basil leaves (for garnish)

Instructions

  1. Prep the Chicken: If the chicken breasts are thick, slice them in half horizontally for quicker cooking. Pat them dry, then season generously with salt and pepper.
  2. Sear the Chicken: In a large skillet over medium-high heat, add the olive oil. Once hot, add the seasoned chicken breasts, searing them for about 5-6 minutes on each side until they’re golden-brown and fully cooked. Once done, transfer the chicken to a plate.
  3. Make the Sauce: In the same skillet, melt the vegan butter. Add the minced garlic, diced shallots, red pepper flakes, and oregano. Sauté for a minute or so until fragrant.
  4. Combine: Pour in the chicken broth, then stir in the coconut milk, chopped sun-dried tomatoes, and nutritional yeast. Let this mixture simmer for 2-3 minutes.
  5. Thicken the Sauce: To achieve the perfect sauce consistency, stir in a cornstarch slurry (equal parts cornstarch and water) and let it simmer until it thickens to your liking.
  6. Serve: Finally, plate the chicken, spoon the fragrant sauce over the top, and garnish with fresh basil leaves. Enjoy over noodles, spaghetti squash, or rice for a wholesome meal.

Notes

If you have leftovers, store them in an airtight container in the refrigerator for 3-4 days. Reheat gently to avoid drying the chicken.
