A quick and nourishing breakfast of scrambled eggs, spinach, and feta cheese on whole grain toast.

Ingredients

  • 4 Eggs
  • 1 cup Spinach
  • 1/2 cup Feta cheese
  • 2 slices Whole grain toast
  • 1 Avocado
  • Salt to taste
  • Pepper to taste
  • 1 tbsp Olive oil

Instructions

  1. Heat a skillet over medium heat and add a drizzle of olive oil.
  2. Crack the eggs into a bowl and whisk them gently, seasoning with salt and pepper.
  3. Pour the eggs into the heated skillet and let them cook for about a minute.
  4. Gradually add the spinach, continuing to cook until the eggs are scrambled and the spinach has wilted.
  5. Crumble in the feta cheese and give it a gentle stir to combine.
  6. Serve the delicious mixture on top of toasted whole grain bread, finished with sliced avocado.

Notes

Feel free to substitute feta with goat cheese or use other greens like kale or Swiss chard.
