A nutritious and delicious berry bake packed with protein, perfect for breakfast, brunch, or dessert.

Ingredients

  • 2 cups Full-Fat Cottage Cheese
  • 3 large Eggs
  • ½ cup Almond Flour
  • ¼ cup Honey or Maple Syrup
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Lemon Zest
  • 1 teaspoon Baking Powder
  • 2 cups Mixed Berries (fresh or frozen)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare your baking dish by greasing it.
  2. Blend cottage cheese and eggs until smooth.
  3. Transfer the mixture into a bowl and mix in almond flour, sweetener, vanilla extract, lemon zest, and baking powder.
  4. Fold in the mixed berries until well-distributed.
  5. Pour the batter into the prepared baking dish.
  6. Bake for 35–40 minutes until golden and set.
  7. Cool for 20–30 minutes before slicing and serving.

Notes

Serve warm with Greek yogurt or a drizzle of maple syrup. Leftovers can be stored in the refrigerator for up to a week.
