A creamy and zesty Lemon Cream Chia Pudding that’s healthy and easy to make, perfect for meal prep or as a refreshing dessert.

  • 1 cup almond milk (or any milk of choice)
  • 1/4 cup lemon juice
  • 2 tablespoons maple syrup (or honey)
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • Fresh berries for topping (optional)

Instructions

  1. Combine the chia seeds, almond milk, lemon juice, maple syrup, and vanilla extract in a bowl.
  2. Stir well to ensure everything is mixed thoroughly and clumping doesn’t occur.
  3. Add the lemon zest, mixing again to incorporate it throughout.
  4. Cover and refrigerate for at least 240 minutes, or overnight, until it thickens to a pudding-like consistency.
  5. Serve chilled and top with fresh berries if desired.

Notes

This pudding can avoid clumping if stirred well after adding the chia seeds. Customize with different milks or sweeteners as per preference.
