A delightful and nutritious way to enjoy a filling meal in just a few bites, perfect for breakfast or snacks.

  • 6 large eggs
  • 1/2 cup cottage cheese
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1/4 cup cooked bacon or sausage (optional)
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • Salt and pepper to taste
  • Cooking spray or oil for greasing

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or oil.
  2. Whisk together the eggs, cottage cheese, salt, and pepper in a medium bowl until well mixed.
  3. Fold in the shredded cheese, cooked bacon or sausage (if using), diced bell peppers, and onions.
  4. Pour the egg mixture evenly into the muffin tin, filling each cup about three-quarters full to allow for expansion.
  5. Bake for 20-25 minutes, or until the egg bites are set and lightly golden on top.
  6. Remove from the oven, let cool for a few minutes, and lift them out of the muffin tin.
  7. Enjoy warm, or store in the refrigerator for later use!
